My favorite Dry Ribs

A good rib needs to have a lot of flavours and a good cooking technique. I have always love my grandfather's signature ribs because they were both those two things. Ever since he gave the family recipe to me, I always cook his signature dish whenever I go to a celebration for his honour and everybody loves it. They never get enough of it. I also want to share the world his cooking, because I want his name to be seen and heard.

This recipe is from my grandfather's recipe and it shows all his techniques and ingredients in order to make the perfect ribs in the world. Although it's quite complex and requires a lot of patience. It is the joy of cooking the dish makes it worth the wait.

  • Vinegar - this coat the ribs with rich flavours and tightens the meat.
  • Soy Sauce - this also enchance the flavour of the dish and this is used for the color of the meat.
  • Pepper - adds more flavour and color with the other species.
  • Bay Leaves - this is used for fragrance and color. They add a deep of flavour as well to make it more savory.
  • Mapple Syrup/Honey/Sugar - either of these three are fine to use for the dish. You have to have balance out the saltiness of the dish with something sweet to make it more enjoyable.
  • Onions - they can improve the savouriness of the dish along side with the garlic cloves.
  • Garlic Cloves - this can enchance the savoriness of the cuisine alongside the onions.
  • Pork ribs - a rack of pork ribs would be just enough to feed an entire family.
  • Cover a large baking pan with foil and gently brush with oil
  • Mix 1/4 cup of vinegar, 1/2 cup of soy sauce, and 1/4 teaspoon of pepper and 1/8 cup of maple syrup/honey/sugar in a bowl and mix
  • Cut the ribs into individual pieces and smash the garlic cloves and and onions alongside
  • Pour the soy sauce and vinegar mixture over the ribs and flip it several times to coat each piece with the mixture
  • Arrange the ribs, cover baking pan with foil and let them sit at least 4 hours or overnight
  • Preheat the oven to 300 degress and bake ribs for 2 hours until fork tender
  • Prepare baking sheet - cover with foil and coated with oil
  • Remove baking pan from oven and uncover, transfer ribs to the baking sheet
  • Brush ribs with marinade sauce and boil on high for about 7 to 10 minutes basting ribs on each side every 3 to 5 minutes
  • Finish ribs on the grill while basting marinade sauce til it's ready to serve

Recently, I came across this allrecipes food news article that announced that Costco is selling St. Louise style dry ribs, other than their famous Rotisserie Chicken. The chain’s ribs are a meatier cut from the belly of the pit, and a bit flatter than baby back ribs. They have a big amount of meat, fully tender, and very flavorful as well as have a savory dry rib coating with a combination of spiciness and saltiness to it. The writer was very hesitant on the news that the internet is claiming that these are even better than the famous Rotisserie Chicken and very skeptical with the price of the meat being at $17.99 for 1.5 pounds of ribs. And when it came to the writer’s critique of the dish, the writer described them as perfectly well-balanced and savory, but it is on the salty side. They are a good deal, although the writer highlighted that it isn’t groundbreaking, but the quality of flavour and how tender and meaty the meat are, the price is a fair price. It is a good fully prepared main dish that can feed a whole entire family with the potential of leftovers for lunch or dinner, or even a potential different kind of recipe using the leftovers from the ribs. It’s a good meal that you can pick up and buy as well as a perfect dish to bring to an occasion that you were supposed to bring something . A good picnic is amazing with barbecue, especially smoking hot dry ribs, especially during the summer and spring times. My favorite spot for barbecue is a little bit far into the West side of Edmonton. Drive to Glastonbury, and drive straight ahead to 199 St NW and beside the Spirit West United Church, there will be the spotted picnic spot. What I love about this spot are the green grass and the view of the city, nothing beats something like that. Directions here!
